Honeycrisp Apple and Red Grape Fall Salad

Fall food is my favorite food. It can be cool, crisp, and refreshing or it can be warm, hearty, and comforting. It’s like the best of both worlds. Fall food also has some of the best seasoning too. Cardamom, ginger, nutmeg, cinnamon, clove, cumin, chili, fennel… I could keep naming these spices but I think I’ve made my point. Obviously I have a deep love for fall food. That’s probably why most of my recipes on the blog have been born during the fall months. This Honeycrisp Apple and Red Grape Fall Salad is my take on one of my favorite fall seasoned items–the Ancient Grain and Arugula salad from Panera. Dietetic Internship: Week 5 Recap @ NEP

Today’s blog post weekly recap of my dietetic internship will be a short one. Last week was my second week on my Nutrition Education Program rotation. Unlike last week, I didn’t do much teaching this time. Actually, out of my four days at NEP, I only taught 3 classes on my last day. What did I do the other days then? I’m glad you asked. Here’s what my week not teaching consisted of: Spending an entire day with a professor for chemistry of foods. I graded undergrad lab reports, gathered up items needed for the lab that day, made a market order for the next week’s lab, assisted students during lab. Taking a professor’s two undergrad classes’ scantrons to be graded. Who knew you took the exams to be graded at the library? Dietetic Internship: Week 4 Recap

Remember all those RA days I talked about where we just made lesson plan bags and stuff? Well those finally paid off today because… I F I N A L L Y got to go to one of our elementary schools and teach! The first day started off as a disorganized day but it got a lot better after I got into the classroom. I was nervous because I’m always nervous (anxiety man). Once I walked into the school and saw the students walking around I felt so at ease. Since this is the first week we’re actually in the schools and I’m on my NEP rotation, I get to be a “trainer” which basically just means I get to show everyone else the ropes while they’re on their RA days this week. August 2017 Favorites

1) Community Supported Agriculture (CSA) Joining a CSA has been a long term goal of mine since I first learned about them about four years ago. A CSA allows you to pay a discounted price for produce in advance to a farmer. This gives the farmer the money in advance to pay for the price of raising crops. You do share the risk of crop failure with the farmer. It took me awhile to find a CSA in my local area. In July I joined my first CSA for $10/week (paying $40 at the beginning of the month) and received a tote of fruits and vegetables from their farm. It wasn’t the best experience. I really wanted to like my CSA guys, I promise. But I didn’t dig it. Half the time my vegetables had mold on them. I was very disappointed in this and the (lack of) variety we […]

Dietetic Internship: Week 3 Recap

My schedule has been so random and a rolling with the flow kind of time that for the past two weeks it hasn’t felt much like a traditional internship. Not that I really know what a “traditional” internship is or feels like??? But ya get the point. Coming out of my out patient rotation, I worked from home my last day and finished off my week by having a RA day. Then followed that up with a three day weekend (thanks Labor Day!), then worked from home on Tuesday, and followed up on Wednesday with another RA day. So basically it had been 8-ish days since I had actually been in a rotation. It was a weird time. So basically I only had two physical days at my rotation, Thursday and Friday. This week was my “Technology” rotation, but it was really just a “social media” rotation. This was a […]
