What I Ate Wednesday #4

If I’m being open and honest (which I always try my best to be with you guys), I’m still struggling in the mornings. I think it’s some combination of every day/week is different, my long commute, not being consistent with my bedtime, and failing to plan my mornings better. For the most part I’m handling my snacks, lunch, and dinner well throughout the day. Breakfast is just my downfall. I have some breakfast foods that I thought were quick and easy (toast with nut butter and frozen burritos), but taking the time to heat them just isn’t in the cards for me right now. Dietetic Internship: Week 1

I was super nervous for class on Monday. My first class, where we review our rotations, was canceled, because well, we haven’t had a full rotation yet. My second class is Advanced Medical Nutrition Therapy I (MNT). It was 2.5 hours and I haven’t had any MNT really in 2-ish years. I was crazy nervous that I would be so lost the first day of class. Glad to report class went great and I loved it! I’ll probably eat those words in like 2 months, but still. We eased into the material by discussing the Nutrition Care Process. My last class of the day was the research proposal class. We had two guest speakers who spoke about their children’s food allergies. I really enjoyed it! What I Ate Wednesday #3

This is an exciting WIAW (What I Ate Wednesday) for me! This is my first time doing one as a dietetic intern. Before, I felt like my WIAW were all pretty similar because my schedule was pretty standard. Now my schedule is ever changing! I’m excited to share how my meals differ with my lifestyle change. Today was my week 1 of rotations and my second day back at the old WIC office. I’m still adjusting to the time and schedule changes aka we were rushing to get out the door this morning. I needed something that traveled well and I could manage eating while driving so I ended up with this protein bar and my coffee. Dietetic Internship Orientation Recap

GUYS. I can f i n a l l y say I’m a dietetic intern !!!!!!!!!! I started my dietetic internship like a week and a half ago. Well, that’s when orientation started at least–which still counts! And is why you’re all here… right? Here’s the breakdown… My internship has 12 people in it, including me. We’re all full-time and on kinda similar schedules. Every Monday we have class together all day. Three days a week we have rotations, which are all different (or sometimes the same). The remaining one day left is our graduate research assistant day (RA day for short). I’m really liking my internship class so far! Half of the class graduated from Marshall’s undergrad, the rest of us are a mix. Me and one other girl are from WVU and the rest are from out of state. I feel like we have a pretty good mix. […]

Caribbean Vegan Burritos with Cauliflower and Jicama

I love using cauliflower as a meat replacer. It’s one of my favorite hacks I’ve picked up in my journey of reducing my meat consumption. I don’t like to label my eating habits, but I do like to find creative ways to increase my fruit and vegetable consumption. Getting out of the habit of making meat the start of a dish can be hard. Breaking any habit is hard. But cauliflower makes getting more into a habit of treating my vegetables as the star a lot easier. Thanks cauliflower! Cauliflower is low in calories, fat, and carbs. It’s high in Vitamin C and K, and pretty good in most of the B vitamins. It is low in protein however, to be a meat replacer. But that’s ok!
