Dietetic Internship Weeks 18-28: Clinical 1 & LTC

I’m back tracking here a bit to share some past rotation experiences from this semester. Okay, back tracking is an understatement since I’m wrapping up this semester in like two weeks and this post is going to be about the first part of the semester… but it is what it is. This semester has felt a lot quicker than last semester, which is odd considering there were no breaks this semester, but there were breaks every month last semester. To keep this post from being longer than it needs, let’s just jump in! Week 18: Community Outreach The focus of my internship is community, specifically school nutrition education…

    Butternut Squash & Turkey Chili

I totally have to give credit for the inspo on this recipe to my friend Jen, from the local extension office. She always has great tastings using farm fresh ingredients at our local farmers’ market. She had a turkey chili at one of the last markets back in October that was SO DAMN GOOD. I needed to know what she did to make it so bangin’. Butternut squash y’all. Now, I never got her recipe from her because we always get too caught up in chit chat, me trying all her foods, and picking up my CSA. But I have been working on perfecting my own version of it ever…

Dietetic Internship Weeks 13-17: NEP, MNT Case Studies, Community Outreach, & Fall Semester Wrap Up

I totally had every intention of getting this blog post up during my Christmas break. If you follow me on Instagram, you know we had a pretty chaotic time. We took a vacation to the beach, since it was the only break I’ll be getting until the end of my program and Aaron had some PTO to use up before the new year. I had one week off where I was home–but it was spent getting things in order to be able to leave, seeing family, and other odds and ends. Then we were off to the beach! We had a really great time, until we he got sick, then…

Dietetic Internship Weeks 6-12: Huntington’s Kitchen, NEP, Community Outreach, WVU Extension + Outpatient

I started the internship with the idea of having a weekly blog post every Monday dedicated to recapping my previous week of the internship. Andddd my last internship related post was 6 weeks ago. Oops. Win some, lose some. Honestly, it was a little overzealous to think I could do that. Between my schedule and the general lack of excitement on some weeks, it just wasn’t happening. So time to catch up with a dietetic internship update and recap of weeks 6-13! Week 6: Huntington’s Kitchen Huntington’s Kitchen was one of my rotations I was most excited about! I first learned about the kitchen from watching Jamie Oliver’s Food Revolution.…

    Massaged Kale Autumn Harvest Salad

Can I let you in on a secret to actually liking kale? MASSAGE IT. Honestly. Truly. It’s the best way to enjoy kale. I have a confession. I’m an almost dietitian, and I don’t really care for kale. It’s pretty bitter and strong. Which makes it great for tougher dishes, where you’re gonna cook the heck out of it, like pastas or soups. But when it comes to salads, I would try to use it sparingly. Then I discovered massaging it. It’s as simple as it sounds. You take your kale pieces in a big bowl, drizzle with EVOO, and then get to work massaging your kale–just like you would…
