Pumpkin Spiced Muffins

Happy first day of fall! Fall is my absolute favorite season—cooler days, crisp leaves crunching beneath your feet, chunky sweaters, dark colored lipsticks, oversized sweaters, stylish boots. I kicked off the season the only way I know how—breaking out the pumpkin pure for pumpkin flavored everything! My first recipe of the season is an oldie, but a goodie. Behold, chocolate chip pumpkin spiced muffins. These little morsels are quite popular around the foodie community. I grew up eating them from my mom’s kitchen and started making them with my friends in college every chance we got each fall. Overnight Oats Make Ahead Breakfast

There’s no denying that overnight oats had their “moment” on food blogs thanks to Pinterest. They’re actually how I first discovered food blogs. But I never brought myself to try them simply because I’m not a big oatmeal fan. I always hated it growing up, but over the past year or so it’s one of the foods (like tuna or black coffee) I’ve tried to train myself to like for the health benefits. I started off easing into oats by just adding a scoop to my morning or post work out protein smoothie (blueberries + oats + unsweetened almond milk + protein powder = my go to perfection). Eventually I ended up trying to sneak in oats anyway I could, without having to taste them of course! Banana Zucchini Chocolate Chip Muffins

Has it really been almost a month since my last real blog post?  I keep trying out all these new meals and thinking how perfect they’d be for the blog. Problem is, when I come up with these, I’m usually just grabbing stuff from my kitchen, throwing it together, and hoping it works. Only after I’ve finished eating and the Instagram comments “blog or it didn’t happen” start rolling in I realize I didn’t write anything down or snap any other photos. Oops. Everyone seemed to really enjoy and like the concept behind make ahead breakfasts, so why not keep the people happy? These are undoubtedly my favorite ones yet. Make Ahead Baked Oatmeal To-Go

My mornings are always hectic (which, makes sense considering my entire life is usually hectic).  However, I didn’t know hectic mornings until I had to start waking up at 3:00AM for work recently.  And to think, I thought trying to cook a breakfast at 7:00AM was hard… Luckily I anticipated this struggle and took advantage of Sunday to do some meal prep. I loved the concept behind my make ahead breakfast wraps, but I don’t love eating the same thing every morning. I decided to add some variety to my fridge with these make ahead baked oatmeal to-go. Simple Protein Sunrise Bowls

Thursday mornings are always hectic in my apartment.  It doesn’t matter if I wake up 3 hours before I need to leave for class or 30 minutes, I will find a way to utilize every single minute.  In a perfect morning routine, I get to sneak in quick workout, make a big breakfast while I brew a pot of coffee, watch the Today Show, cuddle and have playtime with Koda, organize my planner for the day, catch up on social media/e-mails, take my time getting ready, and tidy up after myself along the way.  If only life was perfect… In actuality, I have to spend five minutes convincing myself to leave puppy cuddles and get out of my warm, cozy bed.  I waste five more minutes debating if washing my hair is a priority or not (hint: it isn’t).  I attempt to shower without Koda deciding he misses me so […]
