Strawberry Blueberry Spring Mix Salad

I love a good salad. There’s so many different types and ways to enjoy them. Heck, stuff them in a wrap and it can change the whole game. I’ve been craving a good steak salad lately. There was this awesome place when we use to live in Morgantown called Salad Works and it was THE BOMB. They would make steak on the spot for you for your salad. God I miss that place. Since moving, there’s really no good place that offers a quick salad to go close to where we live. Well, besides Panera. Panera can definitely be a great option, but it can also be a little pricey. I just prefer to make my own salads. This is one of my favorite warmer weather salads. It’s cool and refreshing, plus nourishing. Each time I make it, it always ends up a little different. Sometimes it’s changing out the lettuce for […]

Pumpkin Spiced Muffins

Happy first day of fall! Fall is my absolute favorite season—cooler days, crisp leaves crunching beneath your feet, chunky sweaters, dark colored lipsticks, oversized sweaters, stylish boots. I mean, is there anything better than sweater weather? If you answered yes please DM me so I can either know about it or pray for you. I kicked off the season the only way I know how—breaking out the pumpkin pure for pumpkin flavored everything! My first recipe of the season is an oldie, but a goodie. Behold, chocolate chip pumpkin spiced muffins. These little morsels are quite popular around the foodie community. I grew up eating them from my mom’s kitchen and started making them with my friends in college every chance we got each fall. Once you see the short ingredient list and take your first bite, you’ll understand why everyone is obsessed. Super easy to make and a delicious morning treat! YUM. Overnight Oats Make Ahead Breakfast

There’s no denying that overnight oats had their “moment” on food blogs thanks to Pinterest. They’re actually how I first discovered food blogs. But I never brought myself to try them simply because I’m not a big oatmeal fan. I always hated it growing up, but over the past year or so it’s one of the foods (like tuna or black coffee) I’ve tried to train myself to like for the health benefits. I started off easing into oats by just adding a scoop to my morning or post work out protein smoothie (blueberries + oats + unsweetened almond milk + protein powder = my go to perfection). Eventually I ended up trying to sneak in oats anyway I could, without having to taste them of course! My favorite is throwing a cup in my nutribullet, giving a few quick pluses, and using them like a breadcrumb for burgers or chicken. […]

Banana Zucchini Chocolate Chip Muffins

Has it really been almost a month since my last real blog post?  I keep trying out all these new meals and thinking how perfect they’d be for the blog. Problem is, when I come up with these, I’m usually just grabbing stuff from my kitchen, throwing it together, and hoping it works. Only after I’ve finished eating and the Instagram comments “blog or it didn’t happen” start rolling in I realize I didn’t write anything down or snap any other photos. Oops. Everyone seemed to really enjoy and like the concept behind make ahead breakfasts, so why not keep the people happy? These are undoubtedly my favorite ones yet. I’ve made three batches so far and still love them! They’ve also been a great crowd pleaser with my friends. It’s great to have a variety of options; ready to go whenever I have guests visiting for the weekend!  Let me know if you all try these out and making any […]

Eggplant Parmesan

It’s been a few months since I’ve adopted meatless recipes into my diet and I’m still loving it. I always enjoy playing with new recipes. The greatest trick I’ve picked up with meatless recipes is to take my favorite recipes that would typically include meat, and find a vegetable to put in its place. Super easy and I still get to satisfy my cravings. Bonus: consuming even more veggies. Chicken Parmesan is easily one of my favorite dishes (especially if it’s coming from Carrabba’s). I’ve had some of my nutrition friends tell me I’d love eggplant, so I had to give eggplant Parmesan a try. I have to say, it is definitely one of my favorite dishes. Super easy to make and inexpensive. I’ve already made it three times since I’ve started meatless Monday! It yields six servings and can carry me through the entire week. I’ll just change up […]
