Caribbean Vegan Burritos with Cauliflower and Jicama

I love using cauliflower as a meat replacer. It’s one of my favorite hacks I’ve picked up in my journey of reducing my meat consumption. I don’t like to label my eating habits, but I do like to find creative ways to increase my fruit and vegetable consumption. Getting out of the habit of making meat the start of a dish can be hard. Breaking any habit is hard. But cauliflower makes getting more into a habit of treating my vegetables as the star a lot easier. Thanks cauliflower! Cauliflower is low in calories, fat, and carbs. Stuffed Summer Squash Blossoms

Saturdays are meant for Farmers’ Market. It’s just a simple fact. I love year-round Farmers’ Markets, but you can’t beat the produce available this time of year. I attend my local market religiously. Doing so has been a great way for me to really get to know my farmers. I always buy the same produce off the same farmers. Nothing beats a Gritt’s tomato. La Ja has the ripest blackberries. The past two Saturdays I’ve gotten to know a new (to me) farmer. Her table set up caught my eye because she had one bag of sunflower sprouts out for purchase and one she was snacking on. We immediately got to talking about nutrition. It’s rare to find someone who grows microgreens in my area. Likewise, it’s rare for a farmer to find someone who already knows about microgreens. Strawberry Blueberry Spring Mix Salad

I love a good salad. There’s so many different types and ways to enjoy them. Heck, stuff them in a wrap and it can change the whole game. I’ve been craving a good steak salad lately. There was this awesome place when we use to live in Morgantown called Salad Works and it was THE BOMB. They would make steak on the spot for you for your salad. God I miss that place. Since moving, there’s really no good place that offers a quick salad to go close to where we live. Well, besides Panera. Panera can definitely be a great option, but it can also be a little pricey. Pumpkin Spiced Muffins

Happy first day of fall! Fall is my absolute favorite season—cooler days, crisp leaves crunching beneath your feet, chunky sweaters, dark colored lipsticks, oversized sweaters, stylish boots. Overnight Oats Make Ahead Breakfast

There’s no denying that overnight oats had their “moment” on food blogs thanks to Pinterest. They’re actually how I first discovered food blogs. But I never brought myself to try them simply because I’m not a big oatmeal fan. I always hated it growing up, but over the past year or so it’s one of the foods (like tuna or black coffee) I’ve tried to train myself to like for the health benefits. I started off easing into oats by just adding a scoop to my morning or post work out protein smoothie (blueberries + oats + unsweetened almond milk + protein powder = my go to perfection). Eventually I ended up trying to sneak in oats anyway I could, without having to taste them of course!
