White Watermelon Summer Sangria

I’m well known with my close friends for making ah-mazing homemade sangria. Probably because I had my sangria phase. No seriously, there was a fresh pitcher of sangria in my fridge every weekend (read: daily) for about a solid year. I was known for showing up to a gathering with a pitcher in my hand. Benefits of living in the same apartment complex as your best friends, easy transportation. I’m not much of a white wine drinker. I tend to like my wine dark, like my coffee, wardrobe, and soul. Overnight Oats Make Ahead Breakfast

There’s no denying that overnight oats had their “moment” on food blogs thanks to Pinterest. They’re actually how I first discovered food blogs. But I never brought myself to try them simply because I’m not a big oatmeal fan. I always hated it growing up, but over the past year or so it’s one of the foods (like tuna or black coffee) I’ve tried to train myself to like for the health benefits. I started off easing into oats by just adding a scoop to my morning or post work out protein smoothie (blueberries + oats + unsweetened almond milk + protein powder = my go to perfection). Eventually I ended up trying to sneak in oats anyway I could, without having to taste them of course! Banana Zucchini Chocolate Chip Muffins

Has it really been almost a month since my last real blog post?  I keep trying out all these new meals and thinking how perfect they’d be for the blog. Problem is, when I come up with these, I’m usually just grabbing stuff from my kitchen, throwing it together, and hoping it works. Only after I’ve finished eating and the Instagram comments “blog or it didn’t happen” start rolling in I realize I didn’t write anything down or snap any other photos. Oops. Everyone seemed to really enjoy and like the concept behind make ahead breakfasts, so why not keep the people happy? These are undoubtedly my favorite ones yet. I’ve made three batches so far and still love them! They’ve also been a great crowd pleaser with my friends. Eggplant Parmesan

It’s been a few months since I’ve adopted meatless recipes into my diet and I’m still loving it. I always enjoy playing with new recipes. The greatest trick I’ve picked up with meatless recipes is to take my favorite recipes that would typically include meat, and find a vegetable to put in its place. Super easy and I still get to satisfy my cravings. Bonus: consuming even more veggies. Chicken Parmesan is easily one of my favorite dishes (especially if it’s coming from Carrabba’s). I’ve had some of my nutrition friends tell me I’d love eggplant, so I had to give eggplant Parmesan a try. I have to say, it is definitely one of my favorite dishes. Make Ahead Baked Oatmeal To-Go

My mornings are always hectic (which, makes sense considering my entire life is usually hectic).  However, I didn’t know hectic mornings until I had to start waking up at 3:00AM for work recently.  And to think, I thought trying to cook a breakfast at 7:00AM was hard… Luckily I anticipated this struggle and took advantage of Sunday to do some meal prep. I loved the concept behind my make ahead breakfast wraps, but I don’t love eating the same thing every morning. I decided to add some variety to my fridge with these make ahead baked oatmeal to-go.
