Veggie Ricotta Pasta

It’s hard to believe it has been nearly two months since I’ve adopted Meatless Monday into my diet!  It’s a small goal, but I’m definitely proud that I’ve stuck with it.  I haven’t noticed a huge change in my grocery bill or how I’ve been feeling, but my life has been a whirlwind these past two months so it’s been hard to try to measure (especially during the holiday season). I typically have chicken or fish in all my dinner meals, so it has definitely been a change.  Mainly because these recipes yield enough to carry me through the week with leftovers for lunch or dinner.  I can say that I’ve experienced less food waste since I’ve adopted Meatless Monday, so that’s always a win!  Between shakes, snacking, and side dishes, I usually get in all my required fruits and veggies.  The Meatless Monday recipes I’ve tried out have definitely […]

Simple Protein Sunrise Bowls

Thursday mornings are always hectic in my apartment.  It doesn’t matter if I wake up 3 hours before I need to leave for class or 30 minutes, I will find a way to utilize every single minute.  In a perfect morning routine, I get to sneak in quick workout, make a big breakfast while I brew a pot of coffee, watch the Today Show, cuddle and have playtime with Koda, organize my planner for the day, catch up on social media/e-mails, take my time getting ready, and tidy up after myself along the way.  If only life was perfect… In actuality, I have to spend five minutes convincing myself to leave puppy cuddles and get out of my warm, cozy bed.  I waste five more minutes debating if washing my hair is a priority or not (hint: it isn’t).  I attempt to shower without Koda deciding he misses me so […]

Meatless Monday Black Bean Veggie Burgers

I was lucky enough to end up with classes only on Tuesday’s and Thursday’s this semester. The downside to this though is that Tuesday is the new Monday for me.  So while I’m lucky enough to have Monday’s off and dedicated to Meal Plan Monday, I spend Tuesday living life in a whirlwind.  I hoped to have this blog entry up earlier today, but after a long day of lectures, a teaching practicum, and an exam, how could I say no to cuddling up with Koda for a few hours and ignoring social media? One Pan Turkey & Sweet Potato Chili

Wednesday has became my least favorite day of the week. Monday is, well, Monday. Tuesday is basically the new Monday. And Wednesday is just a cruel reminder that tomorrow isn’t Friday. Thursday’s are usually my busiest days so I tend to spend my Wednesday’s preparing to get through Thursday. Yesterday I spent all day running around Morgantown from meeting to meeting. All I wanted in life was to come home, crash on my couch with Koda, and binge watch Gilmore Girls, only being forced to evaluate my life during the fifteen seconds between each episode. Unfortunately, I had to study enteral and parenteral nutrition for my medical nutrition therapy and pathophysiology exam the next morning (which I rocked, btw). Easy Make-Ahead Breakfast Wraps

I love eating a big breakfast as I am sipping my coffee, pup by my side, relaxing and watching the morning news. However, we don’t always get what we want. So while that may be my ideal morning, that isn’t my realistic morning. Typically, Koda whines until I finally get up. I stumble to the shower, throw some dry shampoo in my hair, smear some foundation on, sit and stare at my closet for about 10 minutes debating on if I really have to wear pants today. By the time I make it to the kitchen, coffee is the only thing on my mind. After my second cup, I’m lucky if I remember to throw a Cliff bar in my bag on my way out the door.
